My Favorite Salad Recipe


Confession: I don’t eat as much salad as I should. I always buy the fixings with the intention of bringing them to work for lunches and making them as sides for dinner, but more times than not it doesn’t happen. I find them pretty boring, romaine lettuce, tomatoes, cucumbers, croutons, blah blah blah – over it. There is one salad though, that I’m always down to eat. The first time I had it my Mom had made it as a pre-dinner course. The flavors blended so well with each other, there were different textures, and it tastes more indulgent than it is. My husband even likes it and loves when I whip it up quickly for dinner or as a side. This dish makes a great app before a meal or it can be the meal if you grill up some chicken to add to it. Bring it along to a party or gathering to really wow the crowd and cure the boring salad blues!

Here’s what you need to make it…

Spring Mix


Walnuts, Halved

Gorgonzola Cheese

Apples, Sliced

Raspberry Walnut Vinaigrette

Just mix all the ingredients together and and enjoy!
